Summer squash can be a pain to grow in Florida, between the bugs and the mildew, but it is so good! Grilled with a light, herb rub, this made a special summer supper, and would be an excellent accompaniment to hamburgers, BBQ, or pulled pork. The herb rub recipe makes more than you need, but it is also great on chicken or fish.
Grilled Summer Squash
3 lbs young, tender summer squash (zucchini, yellow squash, and patty pan were what I had from the garden)
1/2 cup olive oil
Herb seasoning:
1/2 teaspoon crushed celery seeds
2 teaspoons crushed fennel seeds
2 teaspoons garlic granules
1 Tablespoon dried basil
1 Tablespoon dried parsley
1 Tablespoon salt
- Slice squash into rounds about 1/2 inch thick.
- Layer squash slices in a large bowl, with a generous sprinkle of the seasoning between layers.
- Drizzle olive oil on, and toss to coat. Let sit about 30 minutes before putting on the grill.
- Cook over some good coals about 5 minutes per side.
